Chicken Fajitas
A healthy and simple weeknight (or weekend) dinner sure to please the whole family

- 4 chicken breasts butterflied if overly thick
- 1 green bell pepper julienne
- 2 red, yellow or orange bell pepper, julienne
- 1 red onion julienne
- 8 Tortillas
Toppings
- 1 Avocado Optional
- 2 tbsp Cilantro Optional
- 8 lime wedges Optional
Fajita Marinade
- 3 cloves garlic minced
- 1 ½ Tbsp parsley or cilantro chopped
- 2 tsp cumin
- 1/2 tsp chili p
- 1 Tbsp smoked paprika
- ½ tsp pepper
- Juice of ½ lime
- 1/2 tsp salt
- 3 Tbsp oil
Making the Fajitas
Turn the grill onto high (or broiler).
While it is heating, place a large skillet on medium high with a few tablespoons of oil
When the skillet is warm, add the onions and peppers. You should hear a sizzle. Season with a teaspoon or so of salt and a dash of pepper
Stir the vegetables occasionally and allow to cook until sweet and tender crisp.
Meanwhile, grill the chicken breast, for 2-4 minutes per side depending on thickness. Allow to rest for about 5 minutes before slicing.
You may also grill the tortilla to warm and soften
